“Freckles,” so-called for its spotted red-on-green leaf pattern, is a variety from the Cos/Romaine branch of the lettuce species. It heads up a little less uniform than our Parris Island Romaine lettuce, but it makes up for its errant nature with its unparalleled beauty. Our selection of Freckles emphasizes the deep-red “freckly” nature of the variety (we’ve noticed a lot of off-types that are more green during our grow-outs, and are not selecting those for seed saving). We regularly grow this lettuce for our community supported agriculture shares, and use it much like Parris Island Romaine: harvesting baby heads for chopped, bagged salad mixes, then followed by the larger heads when they size up.
